I can’t get enough of these gorgeous summer tomatoes! You can even add avocado or fresh nectarines if you wanted to! Now if you need me I’ll just be here eating this whole bowl by myself…
1 pint of farm fresh cherry tomatoes halved ( I like the ones that come in different colors)
1 Large Cucumber diced
1/4 cup crumbled feta cheese
1/2 red onion diced
Olive oil/Red wine vinegar to taste ( I use about 3 T of each)
Sea salt to taste
Mix all ingredients in a bowl. Let chill in the fridge for an hour or two to better enhance the flavors or enjoy right away if you can’t wait!
