I don’t really know what to call these bars. They have nuts, oats and coconut so Oat & Nut Coconut bars? They’re super chewy and delicious and I just came up with em!
Base: In a food processor pulse together 1/2 cup oats, 1 cups nuts (I used a mix of almonds and cashews), 1/2 cup unsweetened coconut flakes until a fine power forms. Add in three dates (soaked in hot water for a few minutes), 5 T date water and 1-2 tsp vanilla. Pulse until a dough forms. Press into a pan and freeze.
Chocolate topping: In a saucepan over low heat combine 1/4 cup coconut oil, 2 T unsweetened cocoa powder and 2 T maple syrup. Pour the chocolate sauce over the frozen bars, sprinkle with sea salt and let freeze again until set.
Cut into bars and enjoy! Store in refrigerator for up to a week.
