Cookie Dough Energy Bites

Simples, fast and taste like cookie dough!

Here is what ya need:

Ingredients:

  • 1/2 cup unsalted cashews (or any nut of choice)
  • 10 dates (soaked in hot water)
  • 1 T peanut butter (make sure the ingredients are just peanuts and salt. No artificial products should be in the pb)
  • ¼ cup shredded coconut
  • 1 T hemp seeds
  • 2 tsp water or more if too dry (optional)

 

 

Directions:

Pulse cashews in food processor into a flour. Discard water and add dates. Pulse until a thick dough forms. Add peanut butter, hemp seeds and coconut until combined. Add water if too dry and pulse again. Last a week in the refrigerator. Makes about 12-15 balls depending on the size they are rolled.

Divide above by 12^
