These cookies are incredibly easy to make. They require 20 minutes (if that) to prepare and are super delicious.
Recipe adapted from smitten kitchen.
1 3/4- 2 cups packed light brown sugar
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1 3/4 cups smooth peanut butter
Coarse-grained sea salt, to finish
Mix brown sugar and eggs in a bowl. Add in vanilla and peanut butter. Scoop onto a cookie sheet and sprinkle with salt before putting them in the oven. Bake for 15 minutes for smaller cookies. I used a large scoop and bake them for 18 minutes turning the tray half way through. Bake until the bottom edges are just golden brown. Let the cookies set and cool before eating. This is very important.
**The original recipe says you can bake the cookies right away. However, if you want the dome shape and cracked tops like in the photos, freeze the dough for 15 minutes (stirring half way through) before baking. Scoop out the cookies and freeze again while the over preheats to 350 degrees F.
