Rachel’s Fool proof Guacamole

I’ve Been making this guacamole for a long time and it still proves to be one of my favorite variations of this side dish to date. The best thing about guacamole is that you can change it to fit your preferences very easily. You don’t like cilantro? Great, don’t add it. Don’t have red onion on hand? Cool, use a white one. See, simple.



2-3 ripe avocados – scooped and mashed into paste

½  medium red onion diced

10 cherry tomatoes diced

½ bunch cilantro roughly chopped

2 limes

1-2 tsp kosher salt

1 garlic clove minced



Mix mashed avocado paste with tomatoes, red onions, garlic and mix. Add cilantro and salt. Mix with lime juice and serve with tortilla chips or chopped veggies.
