Coconut Cream Pie

During Christmas my family and I went on a vacation to Vermont. We went skiing, ice cream tasting at the Ben and Jerrys factory, sampled cheese at the Cabot tasting room, went snow tubing and had the best time. Oh, I also cooked a 5 course meal for my whole family…

Yup. You read that right. I decided to make a crudités dip, soup, main course, side dish and two desserts for my family of 8. This was my crazy idea and it turned out really great! I cooked the entire day but it was worth it.

Let me start off by saying that if you don’t like caramel or coconut, you’re not going to like this pie. It has THREE types of coconut in it. Coconut flakes, coconut milk and coconut oil. Insanely decedent but also light and not too heavy. The caramel layer mixed with toasted coconut tasted like a Samoa cookie. My. Favorite. Cookie.

The pie was so good we ate it for breakfast the next morning.. oops? (picture shown below)
