If you’re like me you love pancakes. Here is a great vegan recipe that my friend Erin made for me years ago and I have been obsessed with ever since.
1 Cup flour
1 cup almond milk
1 tsp baking powder
2 Tsp maple syrup
Mix and cook on pan like any other pancake recipe. I like to cook mine in coconut oil or earth balance.
Optional: Flax, chia, hemp seeds, peanut butter, coconut and nuts
Garnish with: Maple syrup and fresh fruit
